Ingredients

  • 1 pack store-bought pie crust (or empanada dough)
  • 1 cup ButcherBox pulled pork
  • 1/2 cup shredded mozzarella cheese 
  • 2 green onions finely chopped 
  • 1 egg (for egg wash)
  • 1 tbsp water
  • Salsa or sour cream for dipping  (optional)

Instructions

Preparation

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper. 
  • Roll out the pie crust and cut out circles using a round cutter or small bowl. 
  • In a bowl, mix pulled pork, mozzarella, and chopped green onions. 

How to Cook 

  • Place a spoonful of the pork mixture onto each dough circle. Fold in half and press edges with a fork to seal. 
  • In a small bowl, whisk the egg with water. Brush the empanadas with the egg wash for a golden finish. 
  • Arrange on a baking sheet and bake for 15-18 minutes or until golden brown. 
  • Let cool slightly and serve warm with your favorite dip.
