Believe it or not, pork butt actually isn’t a butt at all. It comes from the shoulder of the pig. The misnomer dates back to colonial America when New England butchers used to pack this cut into barrels called “butts.”
When combined with plenty of time and low temperatures, this roast will become tender and flavorful. That being said, it’s best braised or roasted.
