The humble breakfast salad deserves a more prominent place as part of a brunch spread. It is also as a fantastic, light complement to your standard eggs, toast, and bacon.

This light salad is a perfect way to change things up a bit in the morning while still incorporating some of the old standbys. In this instance, bacon adds a savory punch as part of the honey-infused vinaigrette.

Ingredients

Shaved Asparagus and Frisee Salad

  • 2 head frisee lettuce
  • 1 5oz bg baby spinach
  • 1 bu asparagus

Warm Bacon Honey Vinaigrette

  • 1 pkg ButcherBox bacon
  • ¼ c white wine vinegar
  • 2 Tbsp lemon juice
  • 2 Tbsp honey
  • 1 tsp kosher salt
  • ½ tsp ground black pepper

Instructions

Shaved Asparagus and Frisee Salad

  • Shave asparagus with vegetable peeler and place in lemon water until ready to toss with greens.
    Chef Tip: Thick asparagus works best for this, if you can only find skinny aspargus, no worries just roast the asparagus instead.
  • Clean frisee and spinach. Toss with shaved asparagus and warm bacon honey vinaigrette.

Warm Bacon Honey Vinaigrette

  • Dice bacon, place in cold sauce pot. Place sauce pot on stovetop at medium-low heat. Slowly cook bacon until crispy.
  • Turn heat to low, while whisking bacon and bacon fat add remaining ingredients. Whisk until emulsified. Pour warm over salad and toss. Serve immediately while dressing is warm.
