Pork Schnitzel with Brown Butter-Caper Sauce
Ingredients
- 2 ButcherBox boneless pork chops
- 1 cup grapeseed oil
- 1 cup all purpose flour
- 3 eggs
- 1/4 cup capers
- 1 shallot
- 2 cups panko
- 6 tbsp unsalted butter
- 1 bunch parsley
- lemon
- 2 clove garlic
- kosher salt to taste
- black pepper to taste

Preparation
- Preheat the oven to 350°F.
- Butterfly the pork chops lay them out on a few layers of plastic wrap. Cover with plastic and lightly pound until ½ inch thick.
- Wash and chop the parsley.
- Peel and mince the shallot and garlic.
- Roughly chop the capers.
- Cut the lemon into wedges.
How to Cook
- Bread the pork chops by dredging in the flour, then dipping in the egg, and then breading in the panko.
- Heat a large saute pan over medium high heat.
- Add half of the oil and heat until shimmering.
- Cook one breaded pork chop at a time until golden brown and delicious on both sides.
- Transfer the pork to the sheet tray with a wire rack and repeat with the other pork chops.
- Place the pork chops in the oven and cook for 6-8 minutes.
- Drain the saute pan of the oil and wipe it clean.
- Add the butter and cook until lightly browned.
- Add the shallot and garlic and lightly saute.
- Add the capers to the sauce.
- Finish the sauce with a squeeze of lemon juice, the chopped parsley and a sprinkle of salt.
- Plate the pork schnitzel and cover with that delicious, luxurious brown butter-caper sauce. Serve alongside your favorite potato dish and enjoy!
