Pork Schnitzel with Brown Butter-Caper Sauce

This Pork Schnitzel with Brown Butter-Caper Sauce turns simple pork chops into a golden, crispy masterpiece. Lightly breaded and pan-fried, each bite is tender and crunchy. Ingredients

  • 2 ButcherBox boneless pork chops
  • 1 cup grapeseed oil
  • 1 cup all purpose flour
  • 3 eggs
  • 1/4 cup capers
  • 1 shallot
  • 2 cups panko
  • 6 tbsp unsalted butter
  • 1 bunch parsley
  • lemon
  • 2 clove garlic
  • kosher salt to taste
  • black pepper to taste

Instructions

Preparation

  • Preheat the oven to 350°F.
  • Butterfly the pork chops lay them out on a few layers of plastic wrap.  Cover with plastic and lightly pound until ½ inch thick.
  • Wash and chop the parsley.
  • Peel and mince the shallot and garlic.
  • Roughly chop the capers.
  • Cut the lemon into wedges.

How to Cook

  • Bread the pork chops by dredging in the flour, then dipping in the egg, and then breading in the panko.
  • Heat a large saute pan over medium high heat.
  • Add half of the oil and heat until shimmering.
  • Cook one breaded pork chop at a time until golden brown and delicious on both sides.
  • Transfer the pork to the sheet tray with a wire rack and repeat with the other pork chops.
  • Place the pork chops in the oven and cook for 6-8 minutes.
  • Drain the saute pan of the oil and wipe it clean. 
  • Add the butter and cook until lightly browned.
  • Add the shallot and garlic and lightly saute.
  • Add the capers to the sauce.
  • Finish the sauce with a squeeze of lemon juice, the chopped parsley and a sprinkle of salt.
  • Plate the pork schnitzel and cover with that delicious, luxurious brown butter-caper sauce.  Serve alongside your favorite potato dish and enjoy!
