Ingredients

  • 1 Air-chilled whole chicken (about 4-5 lbs) 
  • 1 1 onion quartered 
  • 1 lemon halved 
  • Salt (to taste) 
  • garlic cloves, fresh herbs [thyme, rosemary, etc.] (optional) 
  • Olive oil (optional) 

Instructions

Preparation 

  • Pat the chicken dry with paper towels. 
  • Stuff the cavity with the onion and lemon halves (and optional garlic cloves or herbs). 
  • Use kitchen twine to tie the legs loosely. This step is essential for even roasting. 
  • Generously salt the chicken’s skin, making sure to cover it evenly. For extra crispiness, you can refrigerate the chicken for a few hours or overnight. 

How to Cook 

  • Set the oven to 425°F (220°C). 
  • Place the chicken in a roasting pan or on a sheet pan. Roast for 1 hour and 10 minutes to 1 hour and 30 minutes, depending on the size of your chicken, until the skin is golden and crispy, and the internal temperature reaches 165°F (74°C) when checked at the thickest part of the thigh. 
  • Once roasted, let the chicken rest for 20 minutes to allow the juices to redistribute. 
  • Start by cutting off the legs, then remove the wings, and finally divide the breast into portions.
