Mediterranean Lamb Burgers with Tzatziki and Pickled Red Onions
These Mediterranean lamb burgers are made with ButcherBox's ground lamb, topped with creamy tzatziki, pickled red onions, and fresh cucumber slices. They offer a flavorful and satisfying twist on the classic burger.

Ingredients
For the Burgers:
- 1 lb ButcherBox Ground Lamb
- 2 cloves garlic minced
- 1/4 cup red onion finely chopped
- 1/4 cup fresh mint chopped
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/4 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
For the Tzatziki:
- 1 cup Greek yogurt
- 1/2 cucumber grated and drained
- 1 clove garlic minced
- 1 tbsp fresh dill chopped
- 1 tbsp lemon juice
- Salt and pepper to taste
For the Pickled Red Onions:
- 1 red onion thinly sliced
- 1/2 cup white vinegar
- 1/2 cup water
- 1 tbsp sugar
- 1 tsp salt
For Assembly:
- 4 burger buns
- Fresh spinach or lettuce leaves
- Sliced cucumber
- Crumbled feta cheese optional
Instructions
Prepare the Pickled Red Onions:
- In a small saucepan, combine vinegar, water, sugar, and salt. Bring to a simmer.
- Place the sliced red onions in a heatproof jar or bowl. Pour the hot liquid over the onions and let them sit for at least 30 minutes. Set aside.
Prepare the Burgers:
- In a large bowl, mix the ground lamb with garlic, red onion, mint, cumin, smoked paprika, coriander, salt, and pepper. Combine well.
- Divide the mixture into four equal portions and shape each into a patty.
- Heat a grill or grill pan over medium-high heat. Cook the patties for 4-5 minutes per side, or until they reach your desired level of doneness.
Prepare the Tzatziki:
- In a small bowl, combine the Greek yogurt, grated cucumber, garlic, dill, and lemon juice. Season with salt and pepper to taste. Mix well and set aside.
Assemble the Burgers:
- Toast the burger buns lightly on the grill.
- Spread a generous amount of tzatziki on the bottom half of each bun. Top with a lamb patty, spinach or lettuce, sliced cucumber, and pickled red onions.
- Sprinkle with crumbled feta cheese if using, and place the top bun on the burger. Serve immediately.
