Mediterranean Lamb Burgers with Tzatziki and Pickled Red Onions

Ingredients
For the Burgers:

2clovesgarlicminced
1/4cupred onionfinely chopped
1/4cupfresh mintchopped
1/2tspground cumin
1/2tspsmoked paprika
1/4tspground coriander
1/2tspsalt
1/4tspblack pepper
For the Tzatziki:
1cupGreek yogurt
1/2cucumbergrated and drained
1clovegarlicminced
1tbspfresh dillchopped
1tbsplemon juice
Salt and pepper to taste
For the Pickled Red Onions:
1red onionthinly sliced
1/2cupwhite vinegar
1/2cupwater
1tbspsugar
1tspsalt
For Assembly:
4burger buns
Fresh spinach or lettuce leaves
Sliced cucumber
Crumbled feta cheeseoptional
Instructions
Prepare the Pickled Red Onions:
In a small saucepan, combine vinegar, water, sugar, and salt. Bring to a simmer.
Place the sliced red onions in a heatproof jar or bowl. Pour the hot liquid over the onions and let them sit for at least 30 minutes. Set aside.
Prepare the Burgers:
In a large bowl, mix the ground lamb with garlic, red onion, mint, cumin, smoked paprika, coriander, salt, and pepper. Combine well.
Divide the mixture into four equal portions and shape each into a patty.
Heat a grill or grill pan over medium-high heat. Cook the patties for 4-5 minutes per side, or until they reach your desired level of doneness.
Prepare the Tzatziki:
In a small bowl, combine the Greek yogurt, grated cucumber, garlic, dill, and lemon juice. Season with salt and pepper to taste. Mix well and set aside.
Assemble the Burgers:
Toast the burger buns lightly on the grill.
Spread a generous amount of tzatziki on the bottom half of each bun. Top with a lamb patty, spinach or lettuce, sliced cucumber, and pickled red onions.
Sprinkle with crumbled feta cheese if using, and place the top bun on the burger. Serve immediately.
