Green Goddess Chicken Salad – Fresh, Flavorful & Protein-Packed

Ingredients

For the Chicken: 

  • 1 lb ButcherBox Chicken Breast
  • 1 tbsp ButcherBox Anything Seasoning
  • 1 tbsp olive oil 

For the Salad Base: 

  • 1/2 small cabbage diced 
  • 1 mini cucumber diced 
  • 2 celery stalks diced
  • 1/2 green bell pepper diced
  • 3 scallions diced (whites & greens separated) 

For the Green Goddess Dressing: 

  • 2 cups spinach 
  • 2 garlic cloves 
  • 2 lemons juiced
  • 1/3 cup nutritional yeast 
  • 1 tbsp rice vinegar
  • 2 tbsp hemp seeds
  • 1/4 cup olive oil 
  • Salt & pepper to taste

Instructions

Preparation:

  • Pat dry the chicken breast and season both sides with ButcherBox Anything Seasoning. 
  • Dice the cabbage, cucumber, celery, green bell pepper, scallions, and chives. 
  • In a blender, combine spinach, garlic, lemon juice, nutritional yeast, rice vinegar, hemp seeds, salt, pepper, scallion whites, and half the chives. Blend until smooth, slowly adding olive oil for a creamy texture. 

How to Cook:

  • Heat olive oil in a pan over medium heat. Sear the chicken for 2-3 minutes per side, then cover, lower the heat, and cook for another 10 minutes (or until fully cooked). Let it rest before shredding with forks. 
  • In a large bowl, mix the diced cabbage, cucumber, celery, green pepper, scallion greens, remaining chives, and shredded chicken. Pour the green goddess dressing over the top and toss to coat evenly. 
  • Serve on toasted bread for a sandwich or enjoy as a dip with tortilla chips!
