Green Goddess Chicken Salad – Fresh, Flavorful & Protein-Packed
This Green Goddess Chicken Salad is fresh, vibrant, and packed with protein! Tender shredded chicken is tossed with crisp veggies and a creamy, herby green goddess dressing for a refreshing, nutrient-rich bite. Enjoy it on toasted bread, as a dip, or straight from the bowl!
Pat dry the chicken breast and season both sides with ButcherBox Anything Seasoning.
Dice the cabbage, cucumber, celery, green bell pepper, scallions, and chives.
In a blender, combine spinach, garlic, lemon juice, nutritional yeast, rice vinegar, hemp seeds, salt, pepper, scallion whites, and half the chives. Blend until smooth, slowly adding olive oil for a creamy texture.
How to Cook:
Heat olive oil in a pan over medium heat. Sear the chicken for 2-3 minutes per side, then cover, lower the heat, and cook for another 10 minutes (or until fully cooked). Let it rest before shredding with forks.
In a large bowl, mix the diced cabbage, cucumber, celery, green pepper, scallion greens, remaining chives, and shredded chicken. Pour the green goddess dressing over the top and toss to coat evenly.
