Flank Steak Fajitas

Ingredients

For Flank Steak and Veggies 

  • 1 Butcherbox flank steak 
  • 1 tbsp BBQ Rub Sweet & Smoky 
  • 2 tsp Balinese Truffle salt 
  • 1 red pepper
  • 1 green pepper
  • 1 red onion
  • 1 yellow onion
  • 1 lime
  • 3 tbsp olive oil

For the Cilantro Lime Dressing 

  • 1 1/2 cups Greek yogurt
  • 1 jalapeño
  • Zest and juice of 1 lime 
  • 1 tbsp olive oil
  • 1 tsp Balinese Truffle salt
  • 1 tbsp BBQ Rub Sweet & Smoky
  • 2 avocados
  • 8 leaves of Romaine or Iceberg lettuce 

Instructions

Preparation

  • Set your oven to 400°F 
  • Cut the flank steak into 3 pieces and season all over with BBQ Rub Sweet & Smoky. Set aside. 
  • Slice the peppers and onions into strips, and cut the lime in half. 
  • Slice the jalapeño in half, de-seed, and finely chop. Chop the cilantro and grate the garlic. 

How To Cook 

  • Place the sliced peppers and onions on a sheet pan. Season with 2 tsp BBQ Rub Sweet & Smoky, salt, pepper, and 2 tbsp olive oil. 
  • Place the seasoned flank steak on top of the veggies. 
  • Bake at 450°F for 12 minutes. 
  • While we wait for the steak, in a medium-sized bowl, combine Greek yogurt, lime juice/zest, garlic, chopped jalapeño, olive oil, BBQ Rub Sweet & Smoky, and salt. Mix well, and refrigerate to allow the flavors to meld. 
  • Flip the flank steak and cook for an additional 5 minutes. 
  • Once done, let the flank steak and veggies rest for 5 minutes. 
  • While resting, cut the avocados, and squeeze a little lime juice to prevent browning. 
  • Slice the flank steak against the grain. 
  • Place a few strips of veggies, flank steak, and a dollop of cilantro lime dressing on each lettuce cup. Enjoy your Flank Steak Fajitas in crisp lettuce cups with a tangy, creamy cilantro lime dressing!
