Eggroll in a Bowl with Broccoli Rice
Ingredients
- 1 lb Butcherbox ground beef
- garlic cloves
- Ginger
- onion
- olive oil
- soy sauce
- Sriracha
- cabbage
- 1 head of broccoli
- 2 pints mushrooms
- carrot
- celery stalks
- Lemon Pepper Bright & Zesty Seasoning
- Scallions (for garnish)
- Cilantro (for garnish)
- Lime wedges (for serving)
Instructions
Preparation:
- Chop 1 cabbage, 1 carrot, 1 onion and 2 celery stalks into bite-sized pieces.
- Mince 3 cloves of garlic and 1-inch ginger. Slice 2 pints of mushrooms.
- Finely chop scallions and cilantro. Cut lime into wedges and set aside.
- Using a knife, grater, or food processor, finely chop 1 head of broccoli into rice-sized pieces.
How to Cook:
- Heat a large skillet or wok over high heat and add 1 tablespoon olive oil.
- Add garlic, onion and ginger, sautéing for 30 seconds. Stir in the mushrooms and cook for 3-5 minutes until browned.
- Add ground beef and cook for 3 minutes, breaking it apart as it browns.
- Mix in the cabbage, carrots, and celery stalks.
- Season with BB lemon pepper seasoning, 1 tablespoon soy sauce, and 1/2 teaspoon Sriracha. Sauté for another 5-7 minutes, stirring occasionally, until vegetables are tender. Remove from heat and set aside.
- Heat 1 tablespoon olive oil in the same skillet over medium heat.
- Add the 1 minced garlic clove and sauté for 30 seconds. Stir in broccoli rice and cook for 2 minutes, stirring occasionally. Add 2 teaspoons soy sauce and mix well. Remove from heat.
- Place broccoli rice in a bowl. Top with the beef and vegetable mixture. Garnish with chopped scallions, cilantro, and a squeeze of lime. Serve immediately and enjoy!
