Bacon, Egg, and Avocado Breakfast Burrito
Ingredients
- 4 ButcherBox Uncured Bacon & Cheese Egg Bites
- 4 slices ButcherBox Bacon
- 2 large flour tortillas
- 1 ripe avocado sliced
- shredded cheese, salsa, sour cream toppings, optional
Instructions
- Cook the ButcherBox Bacon until crisp. Let cool on a paper towel-lined plate, then crumble or chop into bite-sized pieces.
- Open frozen Egg Bites by peeling back film and discarding the outer packaging. Microwave the Egg Bites uncovered on high for 90 seconds in the paper tray. Once cooked, let them rest for 1 minute. Cut them into smaller pieces for easier burrito assembly.
- Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side or until pliable.
- Assemble the burritos: Lay out the warm tortillas and distribute the sliced avocado across the center of each tortilla.
- Add the chopped egg bites and bacon over the avocado. If using any optional toppings, sprinkle them on now.
- Fold in the sides of the tortilla and roll up tightly to enclose the filling.
- Optional: For a crispy finish, place the rolled burritos seam-side down in a hot, dry skillet, turning to crisp all sides.
- Slice the burritos in half to serve. Enjoy immediately!
