Ingredients

  • 2 lbs ButcherBox Chicken Wings
  • 1/4 cup soy sauce
  • 1/4 cup olive oil
  • 3 green onions finely chopped
  • 3 cloves garlic minced
  • 2 Scotch bonnet peppers seeds removed and finely chopped
  • 2 tablespoons fresh thyme leaves
  • 1 tablespoon ground allspice
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • Juice of 2 limes

Instructions

  • Prepare the Jerk Marinade. In a bowl, combine soy sauce, olive oil, green onions, garlic, Scotch bonnet peppers, thyme, allspice, brown sugar, cinnamon, nutmeg, black pepper, salt, and lime juice. Mix well to create the jerk marinade.

  • Place the chicken wings in a large bowl or a zip-top bag. Pour the jerk marinade over the chicken wings, ensuring they are well-coated. Massage the marinade into the wings. Seal the bag or cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to let the flavors meld.
  • Preheat your grill to medium-high heat.
  • Remove the chicken wings from the marinade and let any excess drip off. Place the wings on the preheated grill and cook for about 20-25 minutes, turning occasionally, until the wings are cooked through and have a nice char.
  • Use a meat thermometer to ensure the internal temperature of the wings reaches 165°F (74°C).
