Sweet Potato Hash with Spinach & Pepper Egg White Bites

Ingredients

  • 2 pieces Spinach & Bell Pepper Egg White Bites
  • ¼ cup olive oil
  • 1/3 cup red bell pepper diced
  • 1/3 cup onion diced
  • 1 small sweet potato peeled and ½” diced
  • kosher salt to taste
  • black pepper to taste

Instructions

  • In a large sauté pan, heat the olive oil over medium high heat. Add the diced onion and red bell peppers. Cook for 1 minute.
  • Add the diced sweet potato to the pan. Season to taste with salt and pepper. Cook the sweet potato for 10 to 12 minutes, stirring often. Potato should be fork tender when cooked through.
  • Prepare Egg Bites by microwaving them in the paper tray for 90 seconds. Cut into 9 equal pieces (about 1” in size). Gently fold the Egg Bites into the sweet potato hash. Cook for 1 minute. Serve and enjoy.
