Soba Noodle and Steak Salad With Ginger-Lime Dressing

This Soba Noodle & Steak Salad with Ginger-Lime Dressing is a refreshing, flavor-packed delight! Crisp bok choy, cool cucumber, and fragrant herbs mingle with tender soba noodles, all tossed in a zesty, gingery lime dressing. Ingredients

For the Salad:

  • 12 oz Butcherbox strip steak
  • 8 oz soba noodles
  • Salt and pepper to taste 
  • 1 tbsp olive oil
  • 1 cup bok choy
  • 1 cup cucumber
  • 1/2 cup shredded carrot
  • 1/4 cup fresh cilantro 
  • 2 green onions
  • 2 tbsp toasted sesame seeds

For the Dressing:

  • 1/4 cup fresh lime juice
  • 2 tbsp soy sauce
  • 1 tbsp freshly grated ginger
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/4 cup olive oil
  • 1 tbsp Butcher's Anything Seasoning

Instructions

Preparation:

  • Chop the bok choy and fresh herbs (cilantro and mint).  
  • Slice the cucumber and green onions. Shred the carrot if not pre-shredded. 
  • In a small bowl, whisk together lime juice, soy sauce, ginger, honey, and sesame oil. Gradually whisk in olive oil until well combined. Set aside. 

How to Cook :

    Cook the Soba Noodles

    • Boil a large pot of water and cook soba noodles according to package instructions. 
    • Drain the noodles and rinse under cold water. Set aside. 

    Cook the Steaks 

    • Season both sides of the strip steak with Butcher's Anything Seasoning, salt, and pepper. 
    • Heat olive oil in a frying pan over medium-high heat. Sear the steak for 4-5 minutes per side for medium-rare, or adjust cooking time for your preferred doneness. 
    • Transfer the steak to a plate and let it rest for 5 minutes. Slice thinly against the grain. 

    Assemble the Salad 

    • In a large bowl, combine bok choy, cucumber, carrot, cilantro, mint, and green onions. 
    • Add the cooked soba noodles and pour the ginger-lime dressing over the top. Toss until evenly coated. 

    Plate and Serve

    • Divide the soba noodle salad onto serving plates. Top with sliced steak and sprinkle with toasted sesame seeds. Enjoy your Soba Noodle and Steak Salad with Ginger-Lime Dressing!
