Salt & Pepper Roasted Pork Sirloin with Broccoli & Cauliflower Latkes

A super simple roast for a delicious cut of pork paired with a lighter version of the classic potato latke. This will become a go-to recipe!

Salt & Pepper Roasted Pork Sirloin with Broccoli & Cauliflower Latkes

Ingredients

  • 1 pkg ButcherBox Pork Sirloin Roasts there are two in a package, use both
  • 1 Tbsp kosher salt
  • 1 Tbsp freshly ground black pepper

Broccoli Cauliflower Latkes

  • 1 ½ c cauliflower riced
  • 1 ½ c broccoli riced
  • c onion minced
  • 4 eggs
  • 1 c coconut flour
  • ½ c Parmesan cheese grated
  • 2 Tbsp coconut oil
  • 1 Tbsp kosher salt
  • 1 Tbsp freshly ground black pepper

Instructions

  • Preheat oven to 250°F. Season pork on all sides with salt and pepper and roast in oven until internal temperature is 135°F, about 1 1/2 hours.
  • Remove from oven and turn oven to 425°F. Roast pork an additional 10 minutes, or until a thermometer inserted into the thickest part reads 145°F. Let rest 8 minutes before slicing and serving.

Broccoli & Cauliflower Latkes

  • Mix cauliflower, broccoli, onions, coconut flour, eggs, Parmesan, salt and pepper in bowl and let sit 10 mintues.
  • Preheat non-stick skillet on medium heat and add coconut oil.
  • Using a soup spoon or 1 oz scoop, make little patties in the oil.
  • Cook latkes for 2 - 3 minutes per side until golden brown, and set on sheet pan. Finish in 350°F oven for 10 minutes.
