Salmon Grain Bowl
Ingredients
- 2 ButcherBox® Salmon Fillets (about 6 oz each)
- 1 tbsp ButcherBox Anything Seasoning
- 1 cup cooked grains (quinoa, brown rice, or farro)
- 1 cup baby spinach or arugula
- 1/2 cup cherry tomatoes halved
- 1/2 avocado sliced
- 1/4 cup cucumber thinly sliced
- 2 tbsp olive oil
- 1 tbsp lemon juice (plus wedges for serving)
- Salt & pepper to taste
Instructions
Preparation
- Pat salmon fillets dry with a paper towel. Rub both sides with 1 tbsp olive oil and sprinkle with ButcherBox Anything Seasoning. Set it aside.
- Halve the cherry tomatoes
- Slice the avocado and cucumber
- Rinse and dry the spinach or arugula
- Reheat your pre-cooked grains in a saucepan over low heat or microwave until warm. Stir in a drizzle of olive oil and a pinch of salt.
How to Cook
- Heat a non-stick skillet over medium heat.
- Place salmon skin-side down and cook for 4–5 minutes, then flip and cook for 2–3 minutes until it flakes easily with a fork.
- Add warm grains to each bowl.
- Top with spinach or arugula, tomatoes, cucumber, and avocado slices.
- Place the salmon fillet on top.
- Drizzle with lemon juice and finish with extra Anything Seasoning or pepper to taste.
