Grilled Salmon Foil Pack with Seasonal Veggies

Ingredients
- 4 ButcherBox Wild-Caught Alaskan Sockeye Salmon fillets about 6 oz each
- 2 medium zucchinis sliced
- 1 lb asparagus trimmed and cut into thirds
- 1 red bell pepper sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper to taste
- Lemon slices for garnish
Instructions
- Preheat your grill to medium-high heat (400ºF).
- On four large pieces of aluminum foil, evenly distribute the sliced vegetables, placing them in the center.
- Place a salmon fillet on top of each vegetable bed. Drizzle with olive oil, then sprinkle garlic powder, salt, and pepper over each fillet.
- Fold the edges of the foil over, sealing the salmon and vegetables inside to create a pack.
- Grill the foil packs for about 15 minutes, until the salmon is cooked through and vegetables are tender.
- Open the packs carefully to avoid steam, garnish with lemon slices, and serve immediately.
Notes
Starting a Charcoal Grill: Clean your grill, stack charcoal, light it, and wait for it to ash over. Spread the coals evenly and preheat the grill for about 10 minutes. A hand held 5 inches above the grill should only last 5-7 seconds for the perfect temperature.
Oven Preparation: These foil packs can be baked at 400°F for about 15-18 minutes.
