Ingredients

  • 2 Butcherbox salmon fillets
  • 2 cups seasonal vegetables (e.g., zucchini, bell peppers, green beans, or carrots), chopped
  • 1 tbsp olive oil
  • 1 1/2 tbsp butter
  • 2 cloves garlic
  • Zest and juice of 1/2 lemon 
  • 1/2 tsp Lemon Pepper Bright & Zesty Seasoning 
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnishing) 
  • Lemon wedges 

Instructions

Preparation

  • Preheat your oven to 400°F 
  • In a small bowl, melt the butter in the microwave or over low heat. 
  • Whisk in the minced garlic, lemon zest, lemon juice, and Lemon Pepper Bright & Zesty Seasoning. Add a pinch of salt and pepper and stir until combined. 
  • Line a baking sheet with parchment paper. 
  • Place the salmon fillets on the baking sheet and arrange the seasonal vegetables around them. 

How To Cook 

  • Pour the lemon garlic butter sauce evenly over the salmon fillets, ensuring each fillet is well coated. Drizzle the remaining sauce over the seasonal vegetables and toss lightly to coat. 
  • Place the baking sheet in the oven and roast for 12-15 minutes, or until the salmon is cooked through (internal temperature should reach 145°F/63°C) and the vegetables are tender. 
  • While waiting for the salmon, finely chop parsley or any fresh herbs you'd like to use as a garnish. Slice lemons into wedges for serving. 
  • Remove the baking sheet from the oven. 
  • Garnish the salmon and vegetables with fresh chopped parsley, if desired.
