Lemon Garlic Butter Salmon with Seasonal Vegetables
Ingredients
- 2 Butcherbox salmon fillets
- 2 cups seasonal vegetables (e.g., zucchini, bell peppers, green beans, or carrots), chopped
- 1 tbsp olive oil
- 1 1/2 tbsp butter
- 2 cloves garlic
- Zest and juice of 1/2 lemon
- 1/2 tsp Lemon Pepper Bright & Zesty Seasoning
- Salt and pepper to taste
- Fresh parsley (optional, for garnishing)
- Lemon wedges
Instructions
Preparation
- Preheat your oven to 400°F
- In a small bowl, melt the butter in the microwave or over low heat.
- Whisk in the minced garlic, lemon zest, lemon juice, and Lemon Pepper Bright & Zesty Seasoning. Add a pinch of salt and pepper and stir until combined.
- Line a baking sheet with parchment paper.
- Place the salmon fillets on the baking sheet and arrange the seasonal vegetables around them.
How To Cook
- Pour the lemon garlic butter sauce evenly over the salmon fillets, ensuring each fillet is well coated. Drizzle the remaining sauce over the seasonal vegetables and toss lightly to coat.
- Place the baking sheet in the oven and roast for 12-15 minutes, or until the salmon is cooked through (internal temperature should reach 145°F/63°C) and the vegetables are tender.
- While waiting for the salmon, finely chop parsley or any fresh herbs you'd like to use as a garnish. Slice lemons into wedges for serving.
- Remove the baking sheet from the oven.
- Garnish the salmon and vegetables with fresh chopped parsley, if desired.
- Serve with lemon wedges on the side for an extra burst of citrus. Enjoy your Lemon Garlic Butter Salmon with Seasonal Vegetables — a versatile and flavorful dish perfect for two!
