Ingredients
- 4 ea ButcherBox Pork Chops
- 3 Tbsp olive oil
- 1 Tbsp kosher salt
- ½ tsp black pepper
Basil Romesco
- 1 c roasted unsalted almonds
- 12 oz roasted red peppers
- ½ c basil rough chopped
- 2 cloves garlic
- 3 ea roma tomatoes cores removed
- 3 Tbsp red wine vinegar
- 2 Tbsp olive oil
- 1 Tbsp kosher salt
- 1 Tbsp black pepper
Instructions
- Preheat grill with two zones, a hot zone and a cool zone.
- Rub chops with olive oil then salt and pepper both sides.
- Place chops on hot zone at a 45° angle to the grill grate.
- Grill for 4 minutes with a quarter turn after 2 minutes.
- Flip chops over and grill for 2 more minutes on hot zone. Move chops to cool zone, close grill lid and continue to grill until internal temperature is 145℉.
- Allow pork chops rest 8 minutes before slicing or serving.
Basil Romesco
- Put all ingreidents into food processor and pulse gently until you have a nice paste.
- Serve ontop of pork chops and enjoy!
