Grilled Pork Chops with Basil Romesco

Ingredients

  • 4 ea ButcherBox Pork Chops
  • 3 Tbsp olive oil
  • 1 Tbsp kosher salt
  • ½ tsp black pepper

Basil Romesco

  • 1 c roasted unsalted almonds
  • 12 oz roasted red peppers
  • ½ c basil rough chopped
  • 2 cloves garlic
  • 3 ea roma tomatoes cores removed
  • 3 Tbsp red wine vinegar
  • 2 Tbsp olive oil
  • 1 Tbsp kosher salt
  • 1 Tbsp black pepper

Instructions

  • Preheat grill with two zones, a hot zone and a cool zone.
  • Rub chops with olive oil then salt and pepper both sides.
  • Place chops on hot zone at a 45° angle to the grill grate.
  • Grill for 4 minutes with a quarter turn after 2 minutes.
  • Flip chops over and grill for 2 more minutes on hot zone. Move chops to cool zone, close grill lid and continue to grill until internal temperature is 145℉.
  • Allow pork chops rest 8 minutes before slicing or serving.

Basil Romesco

  • Put all ingreidents into food processor and pulse gently until you have a nice paste.
  • Serve ontop of pork chops and enjoy!
