Skirt Steak

Skirt steak is long, flat and flavorful. This classic cut is similar to the flank steak, but with an even deeper, beefier taste.

It has lots of connective tissue and a medium to high fat content, perfect for marinating to enhance its tenderness.

The default choice for fajitas, this cut has been a well-kept secret in Tex-Mex cuisine and goes great with lime juice and cumin.
