Chorizo Breakfast Bowl
Ingredients
- 1 lb ButcherBox Chorizo Ground Pork Sausage
- 2 medium-sized sweet potatoes
- 2 eggs scrambled
- ¼ cup cherry tomatoes
- ¼ cup mini bell peppers
- ½ avocado
- cilantro for garnish
- scallions for garnish
- hot sauce for garnish
Instructions
- Preheat oven to 400°F. Cube sweet potatoes into 1-inch pieces, toss with oil, salt, and pepper, and bake for 25-30 minutes until tender.
- While potatoes cook, brown ButcherBox chorizo in a skillet, then in the same skillet, scramble the eggs.
- Slice cherry tomatoes and mini bell peppers; chop cilantro and scallions.
- Assemble the bowl with layers of sweet potatoes, chorizo, scrambled eggs, tomatoes, bell peppers, and sliced avocado.
- Garnish with cilantro, scallions, and a drizzle of hot sauce.
