Caprese Stuffed Chicken with Sweet Potato Mash
Ingredients
For Chicken:
- 2 Butcherbox Chicken Breast
- 4 thin slices mozzarella cheese
- 10 fresh basil leaves
- 1 beefsteak tomato
- 1 tablespoon of olive oil
- 1 teaspoon salt and pepper
- 1 bunch chives
- 1 tbsp Lemon Pepper Bright &
- Zesty Seasoning
For the Sweet Potato Mash:
- 3 sweet potatoes
- 1 tbsp butter
- 2 tbsp Greek yogurt
- 2 tbsp maple syrup
- 1 tsp salt and pepper
Instructions
Preparation
- Preheat your oven to 400°F
- Slice the tomato into 6 slices.
- Cut mozzarella slices in half to make 4 smaller pieces. Set aside.
- Peel and cut sweet potatoes into chunks, placing them in a pot of water.
- Slice each chicken breast lengthwise, creating a pocket (like a book).
How to Cook
For the Chicken:
- Season both the inside and outside of the chicken with salt, pepper, and Lemon Pepper seasoning.
- Fill each chicken breast with 3 slices of tomato, 2 pieces of mozzarella, and several basil leaves. Fold to close.
- Heat 1 tbsp olive oil in a skillet over high heat until it smokes.
- Sear the stuffed chicken for 2 minutes per side.
- Transfer the skillet to the oven and bake for 10 minutes.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
For the Sweet Potato Mash:
- Bring the pot of sweet potatoes to a boil. Cook for 10 minutes or until tender.
- Drain the water and return the sweet potatoes to the pot.
- Add butter, Greek yogurt, maple syrup, salt, and pepper. Mash until smooth.
Plating and serving:
- Plate the stuffed chicken, squeezing fresh lemon juice over the top. Serve a generous portion of sweet potato mash on the side. Enjoy your healthy and delicious meal!
