  • 1 teaspoon salt and pepper
  • 1 bunch chives
  • 1 tbsp Lemon Pepper Bright &
  • Zesty Seasoning

For the Sweet Potato Mash:

  • 3 sweet potatoes
  • 1 tbsp butter
  • 2 tbsp Greek yogurt
  • 2 tbsp maple syrup
  • 1 tsp salt and pepper

Instructions

Preparation

  • Preheat your oven to 400°F
  • Slice the tomato into 6 slices.
  • Cut mozzarella slices in half to make 4 smaller pieces. Set aside.
  • Peel and cut sweet potatoes into chunks, placing them in a pot of water.
  • Slice each chicken breast lengthwise, creating a pocket (like a book).

How to Cook

    For the Chicken:

    • Season both the inside and outside of the chicken with salt, pepper, and Lemon Pepper seasoning.
    • Fill each chicken breast with 3 slices of tomato, 2 pieces of mozzarella, and several basil leaves. Fold to close.
    • Heat 1 tbsp olive oil in a skillet over high heat until it smokes.
    • Sear the stuffed chicken for 2 minutes per side.
    • Transfer the skillet to the oven and bake for 10 minutes.
    • Remove from the oven and let the chicken rest for 5 minutes before serving.

    For the Sweet Potato Mash:

    • Bring the pot of sweet potatoes to a boil. Cook for 10 minutes or until tender.
    • Drain the water and return the sweet potatoes to the pot.
    • Add butter, Greek yogurt, maple syrup, salt, and pepper. Mash until smooth.

    Plating and serving:

    • Plate the stuffed chicken, squeezing fresh lemon juice over the top. Serve a generous portion of sweet potato mash on the side. Enjoy your healthy and delicious meal!
