Ingredients

  • 2 ButcherBox Spinach & Pepper Egg White Egg Bites​
  • 2 slices of ButcherBox Bacon
  • 1 English muffin split and toasted
  • Butter for toasting

Instructions

  • Begin by cooking the bacon to your preferred level of crispiness in a skillet over medium heat or in the oven at 400°F for about 15-20 minutes. Once done, transfer to a paper towel-lined plate to drain and keep warm.
  • While the bacon is cooking, prepare the Spinach & Pepper Egg White Egg Bites​. Open the frozen package, remove the outer packaging, and in its paper tray, microwave the Egg Bites uncovered on high for 90 seconds until the internal temperature reaches 165°F. Let them rest for 1 minute before handling.
  • Toast your English muffin to a golden brown. If desired, spread a little butter on each half for added flavor and moisture.
  • Assemble your sandwich by placing both Egg Bites on the bottom half of your English muffin.
  • Add the cooked bacon slices and finish with the other half of the English muffin.
  • Serve immediately with your choice of condiments.

Notes

Recipe Variation:
For a touch of freshness, add a slice of tomato or some spinach between the egg bites. For those who like it spicy, consider a drizzle of sriracha or a sprinkle of crushed red pepper.
