It’s a deliciously simple meal that can be ready in minutes, whether you’re fueling up for the day or enjoying a lazy weekend brunch!
Bacon Cheddar Breakfast Quesadilla
Ingredients
- 1 large tortilla
- 5 pieces of bacon
- 2 eggs
- 1/2 cup shredded cheddar cheese
Instructions
- Place bacon on a baking sheet lined with foil and bake at 400 for 10-12 minutes. Remove from the pan and pat excess grease with paper towel, then cut in half.
- Scramble eggs & set aside.
- In a large pan over medium heat, place tortilla down, then add 1/4 cup shredded cheese on one half of the tortilla. Add a layer of bacon, then eggs, followed by another layer of bacon and shredded cheddar cheese.
- Fold the tortilla over and fry for another 3-4 minutes, then flip to the other side for another 3-4 minutes until crispy
- Cut in half and enjoy!
