Ingredients

  • 1 lb ButcherBox Premium Steak Tips
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • salt and pepper to taste
  • 2 cups cooked brown rice
  • 1 can black beans (15oz) rinsed and drained
  • 1 cup corn kernels fresh or frozen and thawed
  • 1 avocado diced
  • 1 cup cherry tomatoes halved
  • 1/4 cup red onion finely chopped
  • fresh cilantro for garnish
  • lime wedges for serving
  • shredded cheese sour cream, or dairy-free alternatives (optional)

Instructions

  • In a bowl, toss the ButcherBox Premium Steak Tips with olive oil, ground cumin, chili powder, salt, and pepper until evenly coated.
  • Heat a large skillet over medium-high heat. Add the steak tips and cook for 4-5 minutes for medium-rare, or until desired doneness is reached, turning occasionally. Remove from heat and let rest for a few minutes before slicing into bite-sized pieces.
  • Divide the cooked brown rice among four bowls. Top each with black beans, corn, diced avocado, cherry tomatoes, and red onion. Add the cooked steak tips to each bowl.
  • Garnish and Serve: Garnish with fresh cilantro and serve with lime wedges on the side. Offer shredded cheese and sour cream (or dairy-free alternatives) as optional toppings.

Notes

Grill Preparation for Steak Tips: Preheat your grill to medium-high (400ºF). Grill the seasoned steak tips on skewers for about 3-4 minutes per side or until desired doneness. Let them rest before slicing.
