Barbacoa Egg Rolls

Ingredients

For the Barbacoa Egg Rolls: 

  • 1 package ButcherBox pre-cooked beef barbacoa 
  • 10-12 egg roll wrappers 
  • 1/2 cup shredded cheddar cheese or any preferred  
  • 2 green onions chopped
  • 1 egg (for egg wash) 

For the Dipping Sauce: 

  • 1/4 cup chopped fresh cilantro
  • 2 tbsp chopped green onions
  • 1 tbsp finely chopped onion
  • 1-2 tbsp hot sauce (optional, for spice)

Instructions

Preparation 

  • Shred the Barbacoa: Separate the beef from the sauce, then shred the barbacoa beef into small pieces. 
  • Prepare the Egg Rolls: Place a small amount of shredded barbacoa beef in the center of each egg roll wrapper. Top with shredded cheese and green onions. 
  • Make Egg Wash: In a small bowl, beat the egg to create the egg wash. 

How to Cook 

  • Wrap the Egg Rolls: Fold in the sides of the egg roll wrapper and roll it up tightly, sealing the edges with the egg wash. 
  • Heat oil in a frying pan or deep fryer to 375°F. 
  • Carefully place the egg rolls in the hot oil and fry for 3-4 minutes, turning as needed, until golden brown and crispy. 
  • Make the Dipping Sauce: In a small bowl, combine chopped cilantro, green onions, onion, and hot sauce (optional) for a zesty dipping sauce. 
  • Serve: Remove egg rolls from oil and place them on paper towels to drain. Serve with the dipping sauce.
