Heat a skillet over medium heat. Add chopped bacon and water. Cook until bacon crisps up, about 5-7 minutes. Remove bacon and set aside.
In the same pan with bacon fat, add onions and shallots. Cook for 20 minutes, stirring frequently, until caramelized.
Add apple cider vinegar, brown sugar, and maple syrup to the pan with the onions and shallots. Stir in the cooked bacon and simmer for 5 minutes, creating a thick, sticky jam.
In a griddle or grill pan, cook the beef patties over medium heat for 3-4 minutes per side. Add a slice of cheese on top of each patty at the last minute to melt.
Place each patty on a slider bun, top with bacon jam and sliced jalapenos. Serve immediately.
