Ingredients

  • 1 lb ButcherBox Chorizo Ground Pork Sausage
  • 2 medium-sized sweet potatoes
  • 2 eggs scrambled
  • ¼ cup cherry tomatoes
  • ¼ cup mini bell peppers
  • ½ avocado
  • cilantro for garnish
  • scallions for garnish
  • hot sauce for garnish

Instructions

  • Preheat oven to 400°F. Cube sweet potatoes into 1-inch pieces, toss with oil, salt, and pepper, and bake for 25-30 minutes until tender.
  • While potatoes cook, brown ButcherBox chorizo in a skillet, then in the same skillet, scramble the eggs.
  • Slice cherry tomatoes and mini bell peppers; chop cilantro and scallions.
  • Assemble the bowl with layers of sweet potatoes, chorizo, scrambled eggs, tomatoes, bell peppers, and sliced avocado.
  • Garnish with cilantro, scallions, and a drizzle of hot sauce.
