While the rice is cooking, heat the ButcherBox Beef Barbacoa. If it's frozen, place the unopened pouch on a microwave-safe dish and defrost in the microwave on high for 4-5 minutes. If thawed, simply reheat for 2 minutes. Alternatively, for a stovetop method, pour the contents into a saucepan over medium heat for 12-14 minutes, stirring occasionally until heated through.
Spoon the cooked rice into bowls as the base. Add a portion of the heated beef barbacoa to each bowl.
Top the barbacoa with slices of avocado, a scoop of sweet corn, and pickled red onions. Add a few jalapeño slices for a bit of heat if you like.
