Preheat the air fryer to 360ºF. Remove the chicken from the packaging Rub the chicken all over with 1 tablespoon of the oil; season generously with salt, pepper, and any other seasonings you like. Place the chicken in the air fryer and cook for 10 minutes. Check the chicken; if there are 2 breasts, separate them if you can (don’t worry if you can’t). Carefully flip, lay the chicken in a single layer and cook until the center is no longer frozen solid, about 5 minutes.
Transfer the chicken to a cutting board. Separate the breasts now if you couldn’t before. Cut the chicken in half lengthwise. Brush the cut sides with the remaining oil; season with salt, pepper and any other seasonings. Return to the air fryer, cut sides up. Air fry until cooked through (a meat thermometer stuck into the thickest part should read 165ºF), 7 to 12 minutes longer. Do not overcook.
Serve hot, or let cool, wrap and refrigerate to serve later.
