  • 1 lb ButcherBox ground beef can sub ground turkey, sausage, or chicken
  • 3 bell peppers diced
  • 15 oz (one can) fire-roasted tomatoes
  • 1 bag frozen rice can sub any type of rice
  • shredded cheese - Mexican blend or Cheddar Jack


  • 1 tsp salt
  • 3 tsp pepper
  • 1 tsp paprika
  • 1 tsp ground cumin can sub any type of rice
  • 1 tsp chili powder optional



  • Brown the meat in an oven-safe skillet, ideally cast iron. Strain fat.
  • Combine seasonings in a bowl and spread across cooked meat
  • Stir in roasted tomatoes
  • Stir in diced peppers. Simmer for roughly 2 minutes
  • Stir in cooked rice. Simmer for 1 minute
  • Cover with cheese of your choice. Melt on stove or transfer to preheated oven to melt
  • Serve
